a mini can of tuna in oil (the good kind) with good rye bread and a bit of salsa verde

it was awfully good for something that simple

I know, pretty pathetic for a cook, eh? I'm so lazy these days.

It's the severe healthiness that scares me.

Glazed salmon with garlic mashers, roasted mushrooms, and arugula salad with goat cheese. I ate the rocket, but it's not my favorite, I like it better on turkey sandwiches.

fresh home made guacamale with tomatoes, bits of fried chorizo sausage. It was surprisingly delicious. In fact that's the only way i'm making it from now on.

I made pulled turkey in home-made mole sauce. The recipe wasn't quite right - needs more pepper and more cocoa. But, it was goooooood.

I made orzo pasta with cherry tomatoes and fresh basil, finely chopped shallots and nice chunks of avacados with a red wine vinegrette and salt and pepper topped with goat cheese - and a glass of white wine.

Emptying freezer special. Shrimp, and chicken. Have not decided how to prepare yet. Pasta dish maybe, but looking for new. Anyone?

I marinate my shrimp in olive oil, lemon juice, garlic with dill. Skewer it and either grill or broil it. I serve it with plain yogurt with garlic and dill and a little lemon juice squeezed in.. Chicken probably wouldn't be bad marinated in that either.

Anyway...it's just one of my fav's when it comes to shrimp.

We had saffron chicken and rice last night, with steamed broccoli. It was really simple but really good.
